Share and Serve Sunday: 21 Day Fix Recipes

Since I I LOVE the 21 Day Fix.... I thought I would share some recipes so people get to see that my meal plan is super diverse and the food is awesome.

Slow Cooker Pulled Pork BBQ

Pulled Pork BBQ

Yield: 4 servings
Fix Portions (per serving): 1 red, 1/4 purple, 1/4 green, 1 yellow (if served open-face; 2 if served on whole bun; 0 if served bunless)

Ingredients
1.      1 pork loin
2.      ½ cup unsweetened applesauce
3.      ½ cup water
4.      1 green container (about 1 cup) onions and mushrooms, chopped
5.      1 tsp cayenne pepper
6.      1 tbsp garlic powder
7.      ¼ cup red wine (or apple cider) vinegar
8.      ¼ cup yellow mustard
9.   1 whole wheat bun or roll

Directions
1.      Combine ingredients 1-6 in a crockpot
2.      Cook on low for 7-8 hours
3.      Drain and shred pork. Return to crockpot
4.      Stir in red wine vinegar and mustard (may need to add more, to taste, as well as add additional seasoning like pepper, cayenne, garlic powder)
5.      Serve 1 red container (about 2/3 cup) of pork on whole wheat hamburger bun or deli round


Granola
Yield: About 8 bars
Fix Portions per bar: 1 yellow, ¼ purple (if made with raisins or cranberries added), ¼ blue (if made with nuts added), 1 tsp (PB serving)
  • 1⁄4 cup dates
  • 1 ½ cups old fashioned oats (I recommend toasting them for about 10 minutes on 350 to bring out the best flavor, but this is optional)
  • ¼ cup honey or agave
  • ¼ cup natural peanut butter or almond butter
Directions: 
1. Mix the dates with a couple tablespoons of water and let them soak for about 5 to 10 minutes then drain
2. While they soak, melt the peanut butter or almond butter with the honey on the stovetop or in the microwave
3. Grind the dates into a paste by a food processor
4. Combine all the ingredients with the dates and mix well
5. Line an 8x8 pan with wax paper and lay out
6. If you want to add toppings then add and press them in here
7. Freeze for an hour before cutting 



Grilled corn and black bean salad
 
For 21 Day Fix: I counted this as 1 YELLOW and 1 TEASPOON and if you really want to get technical 1/4 BLUE1 can of organic black beans

Ingredients:
3 ears of corn out of the husk
1 cup sliced grape tomatoes (I had yellow and red) 
1/4 cup Cilantro
1 11/2 tsp. Apple Cider Viengar
Sea Salt
Pepper
Olive oil cooking spray
 1 Tablespoon Olive oil
1 clove minced Garlic
2 oz. Queso Fresco or Feta Cheese
Tin Foil

Directions:
1. Heat your grill to medium- high
2. Spray corn with a little olive oil spray
3. Wrap each piece of corn in a piece of tin foil.
4. Place corn on grill and grill for 20 minutes. Turn it occasionally to get it nice and browned on all sides
5. While corn is cooking mix black beans (rinsed), tomatoes, cilantro, vinegar, oil, garlic, salt and pepper.
When corn is done cooking let it sit and cool off a bit. Then cut it off the cob and add to the bowl. 
Toss everything together and top with the cheese. Lighly toss. Refridgerate until ready to serve. This is best cold and eaten the day it is made. 


Stuffed bell peppers

Yield: 4 peppers
Fix Portions (per pepper): 2 green, 1 red, ½ yellow, ½ blue
Ingredients:

·   4 bell peppers (color of your choice)
·   ½ pound 93% lean ground turkey
·   1 can fire-roasted tomatoes
·   2 garlic cloves, grated
·   1 green container (about 1 cup) onions, chopped
·   2 yellow containers (about 1 cup) cooked brown rice
·   2 blue containers shredded cheddar cheese (I like Kraft triple cheddar)
·   1 tbsp each ground cumin, paprika, black pepper, garlic powder, onion powder, italian seasoning
·   1 tbsp tabasco (more or less to taste)
·  ½ tsp salt (optional)
Directions:
1.         Cook rice according to package instructions
2.         In a skillet with a little EVOO, saute onion and garlic until tender. Remove from pan and set aside.
3.         In same skillet, brown ground turkey
4.         Meanwhile, chop the tops off bell peppers. Heat a large pot of water to boiling.
5.         Boil peppers for 3 minutes and remove. Drain on paper towels
6.         Open can of tomatoes and separate the tomatoes from the juice/sauce its in- but save the juice and spread it in the bottom of a small pyrex baking dish.
7.         In a large mixing bowl, combine ground turkey, sauteed onions/garlic, 1 blue container cheese, 2 yellow containers rice, diced tomatoes, tabasco, and seasoning. Mix well.
8.         Fill each pepper with mixture. Top with remaining 1 blue container cheese and sprinkle paprika on top
9.         Bake at 325 for 20-25 minutes
